Pastries has been in business for over 40 years in Ottawa. The Company was founded
in the late 1960's by Hans Ulrich Zuberbuehler who received his konditor-Master
Diploma in Switzerland. He opened the first Swiss Pastries shops in Carlingwood
and Billings Bridge malls in the late 60's and became famous when he brought
the first high quality "Black Forest" cake to Ottawa.
Today, the Company continues the tradition of producing high quality, premium
European style pastries, cakes, bread, cookies and chocolates. As other bakeries
have introduced low quality ingredients, Swiss Pastries continues to use only
100% fresh whipping cream and butter in our whipping cream and butter cream
cakes, and other baked goods. This has been the secret to our success and longevity.
We currently service retail customers through our five retail locations; Carlingwood
Shopping Centre, Billings Bridge Plaza, 240 Sparks, 205 Richmond Road and our
bakery outlet at 1423 Startop Road. We also have numerous wholesale customers
including the Canadian Government, prominent hotels and restaurants, catering
companies and various embassies.
In addition to our delicious baked goods, our traditional stores sell imported
grocery products such as European chocolates, and locally produced European
style deli meats.
Our newest store at 205 Richmond, is a café style concept serving gourmet
coffees and light lunch fair as well as our famous desserts. This store has
indoor seating and a patio will be opening soon.

Cake FAQ
What type of cake can a wedding cake be?
In the past, wedding cakes were made of fruit cake or pound cake. These
cakes are dense and therefore could support multiple tiers. Today, with the
use of plastic dowels to support multiple tiers, and with new interesting cake
stands, any cake can be used. Popular cakes include: pound cake, carrot cake,
sponge cake, sacher, cheese cake, whipping cream cakes such as strawberry whip,
and mousse cakes.
What type of cake fillings can be used?
The most popular flavours are the following: vanilla, chocolate, mocha and
hazelnut butter cream fillings; fruit fillings; whipping cream based fillings;
cream cheese fillings; and flavoured mousse fillings.
Any flavour of filling is possible. However, wedding cakes with whipping cream
filling will need to be refrigerated and can not be displayed for long periods
of time.
What choices of icing do I have?
Traditionally, wedding cakes were covered with Royal Icing. When this icing
dried, it was very hard to eat and cut threw. Today, most cakes are covered
with Rolled Icing which gives the cake a sleek look, tastes good and is very
versatile. Other available icings are: butter cream, chocolate ganache and whipping
cream.
Can I bring in or email a photo to recreate my perfect wedding cake?
Yes, it is a good idea to have an idea of the cake you would like before
you visit for a consultation. A picture or several pictures can be used to borrow
ideas.
How far in advance do I need to order my wedding cake?
For the widest selection, we ask the bride and groom to give us three weeks
notice. However, if you do find yourself under time constraints, we will gladly
try our best to meet your needs.
Can you deliver my wedding cake?
Yes, the delivery charge varies on the distance. Generally, within Ottawa,
it is $50.00.
What price should I budget for a wedding cake?
You should budget approximately $3.00 to $4.00 per serving. A wedding cake
can be made for as little as $1.80 per serving and as much as $7.00 per serving
or more if it is a very elaborate cake. Price largely depends on size and the
chosen decoration.
Can I put real flowers on my wedding cake?
Yes, you can. If you are interested in doing so, you will need to make arrangements
with your florist. Most florists will add the flowers to the cake once it has
been set-up for display, to ensure the flowers stay as fresh as possible.
Do I have to have a piece of cake for all my guests?
Most weddings today are held in banquet halls and hotels that require you
to purchase a full menu including dessert. As such, the wedding cake is not
eaten for dessert but is used on a night table later on in the evening. Therefore
the portion size will be a lot smaller than required for dessert and it is unlikely
that all your guests will have a slice. Our serving portions in our wedding
cake catalogue are based on this intended use.
If you are intending to serve your cake as dessert, it is important to ensure
that you have sufficient cake to serve all your guests a dessert sized portion.
If the wedding cake you choose does not serve the number you require, we can
increase the size or add a slab cake to make up the pieces as a more economical
alternative.
